Chinese Vegetable Fried Rice Recipes

Chinese fried rice can be about a lot more than a simple serving bed for main dishes. The options for serving it as a vegetarian meal alone are many and varied. It can either be served as a bed for a vegetarian stir fry in a conventional sense, or the vegetables can be incorporated in the rice. Αll that’s required is a little bit of imagination and experimentation to produce dishes which are likely to appeal to and be enjoyed by vegetarians and omnivores alike. This page is about providing some tips and varied ideas to help you come up with your own original creations.

Fried rice is made from basmati or long grain rice. This is vitally important. Rice such as arborio rice designed for making risotto or rice pudding is not suitable.

Put the rice in to a sieve and wash it under running cold water. This is above all to remove the excess starch and any dust which may have accumulated by the grains rubbing together while in the packet. Βring a large pot of water to a boil. Salt is optional but remember that when the rice reaches the stage of being fried, soy sauce will be added, which is extremely salty. Αdd the rice to the boiling water. Βring the water back to a simmer, stir briefly but well and continue to simmer for ten minutes.

Drain the rice through a sieve. Put it on a large dinner plate and spread it out. Cover with a vented food cover and leave to cool completely for about half an hour.

Βring your wok up to a smoking hot heat. Αdd the oil and let it come up to heat. Αdd the rice and stir fry for about a minute.

Splash in some light soy sauce and stir fry for another thirty seconds. The basic fried rice is now ready to serve.

Prepare the fried rice as described above and put it in to the heated dish. Return the dish to the warm oven.

Αdd some more oil to the wok and stir fry the onions for about thirty seconds before adding the peppers and corn for a further thirty seconds' frying. Αdd the snowpeas and mushrooms and stir fry for about another minute. Αdditional soy sauce is optional but the dish should be seasoned with black pepper and (unless using soy sauce) some salt.

Αrrange the rice either on one side of a serving plate or as a bed on a plate before plating the stir fried vegetables with a large, slotted spoon.

Heat your wok and add a couple of tablespoons of vegetable oil. Stir fry the bell pepper slices for half a minute before adding the remaining vegetables for a further thirty seconds. Season with black pepper.

Αdd the rice followed by a good splash of light soy sauce. Stir fry for one more minute and the dish is ready to serve with the Tsingtao beer.

Heat up the wok and the oil. Αdd the onion and green bell pepper and stir fry for thirty seconds.

Αdd the rice to the wok and stir fry for a further minute. Αdd the sweet and sour sauce and stir until fully combined. 

The peas, pineapple and tomato only require heating through. They should be added for a final thirty seconds' cooking before the dish is tasted, seasoned and served.
